Spicy Ajika Sauce With Walnuts


Ajika is a spicy Georgian chili sauce that goes well with many dishes such as ghomi (Georgian cornmeal) fried meat, chicken or even potatoes. Also it can be used as a perfect seasoning when preparing food. There are several versions of sauce, such as Megrelian and Abkhazian style ajika. This particular recipe teaches how to prepare delicious ajika paste with walnuts and chili.


Ingredients


  • 1 kg chili pepper
  • 400 g garlic
  • 300 g walnut
  • 100 g coriander
  • 2 tsp ground savory
  • 3 tsp ground coriander
  • 100 ml wine vinegar
  • 50 ml sunflower oil


Directions


  1. Before starting preparing ajika, scatter peppers on a rug and leave for one day so that they wither and become soft. Afterwards remove stalks and seeds from peppers using gloves. Process peppers, garlic, walnuts, coriander through meat grinder. Add spices and salt to mixture, blend well and ajika is ready. Keep ajika in the fridge.
