Gozinaki


Gozinaki is a Georgian sweet and is traditionally prepared for the New Year. The main secret of preparing gozinaki is to bring the honey to the required condition.

  1. Cut walnuts in thin slices and lightly roast them. Heat the honey in a heavy-bottomed frying pan, on medium-low fire. When the honey starts making bubbles, let it boil for about 2-3 minutes, stirring constantly. Then put the honey aside and let it cool. Repeat this two or three  times to caramelize the honey. Heat the honey one more time and add roasted walnuts. Stir quickly and continue to cook on a low heat, about 5-7 minutes.

  2. Pour the honey-nuts mixture on a wet wooden board and flatten it with a moist wooden spoon or rubber spatula (don’t touch it with your fingers as it burns).  With the help of a wet wooden dough-roller create a ½ inch thick rectangular layer. Let it cool 10 minutes. With a large knife cut Gozinaki into diamonds.
