Georgian cuisine is rich in meat dishes. Fried liver is one the most popular and beloved dishes after khinkali (Georgian dumplings), mtsvadi (barbeque) and kababi (Georgian kebab). There are different ways of preparing liver and here we offer one of them. One may also call it warm salad with roasted liver cubes and tomato, although it can be consumed cold as well.
Dice tomato and onion. Finely chop coriander and garlic. Meanwhile roll liver in flour and fry in oil on both sides until golden-brown. When it is ready let it cool down and cut in cubes. Mix liver with vegetables in bowl, add salt and pepper to taste and mix well again. Cover the bowl and leave for 10 -15 minutes to let all ingredients and flavors combine.
