Chikhirtma


Chikhirtma is a Georgian traditional soup made from chicken. It has a creamy consistency and a pleasant taste.


Ingredients


  • 1 Chicken
  • 4 Eggs
  • 1 Onion
  • 4 cloves Garlic
  • 2 tbsp Butter or ghee
  • 1 tbsp Vinegar
  • 2 tbsp Wheat flour
  • bunch of coriander
  • bunch of dill
  • Salt to taste


Directions


  1. Put the chicken into a deep pot and add enough water to cover it. Bring to a boil and remove any foam from the top. Cook until chicken is very tender. Cut the chicken into pieces and salt it.

  2. In a separate bowl beat the eggs, add the flour and vinegar. Mix well and add a portion of the warm chicken broth little by little, stirring constantly to prevent the eggs from clumping. Stir well to combine the ingredients. Add the eggs mixture to the pot where the chicken broth is. Boil for 10-12 minutes, stirring occasionally.

  3. In a pan cook finely chopped onion in butter or ghee. When golden, add to soup.

  4. Put the chicken pieces in the prepared soup, add salt, crushed garlic and finely chopped herbs.
